Determination of Tourists’ Perceptions and Behavioral Intentions about Bolu as a Gastronomy Destination

چکیده

Bolu ili ve aşçılık üzerine geçmişten günümüze yapılan tüm çalışmalar, ilin turizm potansiyeline dikkat çekmiş, bir gastrnomi merkezi olarak önemini vurgulamış mevcut duru-mun altını çizmek adına hâlihazırda Bolu’yu ziyaret eden yerli/yabancı turistlerin yorum değerlendirmelerini–beklentilerinin ne ölçüde karşılandığını analiz etmemiştir. Bu bağlamda araştırmanın özgün değeri, pozitif senaryolar kura-rak bu gelen ünüyle değil reel bakış açısıyla en güncel değerlendirmelerle ele almaktır. Araş-tırmanın önemi, Bolu’da yeme–içme hizmeti sunan şehir mer-kezi civar restoran, otel, butik otel vb. işletmelerde yöresel ürünlerin denli sunulduğunu bunların turist beklentileri-ni karşılayabildiğini anlamak konusunda da perspektif yaratmasıdır. Yapılan yüz yüze mülakatlar, telefon görüşmeleri anketlerden elde edilen bulguların bütüncül şekilde analizi, araştırmaya fark kazandırmış, sunulan yapıcı önerileri somut hale getirmiştir.
